Weekend Highlights
I actually woke up this morning with a little burst of energy, which is unusual for a Monday morning and almost unheard of for being 35 weeks pregnant. So I put it to good use by taking a 30-minute walk around the neighborhood before I had the chance to plop down and lose motivation. I’m now pushing our BOB Revolution double stroller (even though one seat is currently unoccupied) and while it’s unbelievably smooth, it’s still more of an effort to push than my old single jogging stroller. I’ve been wanting to try out some new slow cooker meals in preparation for baby, and since breakfast is always my most uninspired meal of the day, I tried making overnight oats for the first time on Sunday night. I followed a recipe for apple cinnamon oatmeal and I hate to say it, but…I wasn’t impressed. The consistency was great (steel-cut oats, water and a bit of skim milk), but the flavor was lacking, in spite of the fact that the recipe included brown sugar, vanilla, cinnamon, salt and fresh apples.
