September Cookbook Challenge: Chicken Fingers with Spicy Avocado Sauce

It’s week three of the September Cookbook Challenge! If you haven’t been following, the cookbook for the month is Quick Fix Meals by Robin Miller, and so far we’ve had one awesome recipe and another that was not so great. For this week, I chose Chicken Fingers with Spicy Avocado Sauce and I’m happy to report this one was a success. I literally just finished this meal about 7 minutes ago and I’m already on here posting it, cause it’s just that good. As much as I love cooking (and eating), my experience with Indian food is pretty limited, and I never cook it at home. But I had the better part of a can of coconut milk I needed to use up, and this particular recipe fit the bill, without requiring me to buy any other ingredients – I love that! This tasted different than I expected, but I mean that in a good way…a very good way. If, like me, you’re fairly new to Indian food, this is a great...
