Welcome to my first ever WIAW post! These were actually my eats from Monday, and it was a fairly balanced day, although we had absolutely no fruit in the house. It wasn’t my best day of eating ever, but at 35 weeks pregnant, my appetite and cravings have been all over the place, so it’s certainly better than some days I’ve had lately
Breakfast: oatmeal + cinnamon sugar + apple pie spice (thank you, Penzey’s!), plus a side of unsweetened applesauce
Mid-morning snack: my favorite food EVER – mashed potatoes and gravy! Kind of random but it was left over from Father’s Day dinner and calling my name.
Lunch: My favorite salad (actually, it’s pretty much the only salad I ever make at home): romaine, baby spinach, bell peppers, carrot shreds, broccoli, tomato & basil feta cheese, croutons and Italian dressing.
After-lunch treat: a few bites of Ben & Jerry’s blueberry vanilla graham Greek frozen yogurt.
Dinner: Chicken stuffed with zucchini and mozzarella with zucchini cakes and marinara sauce for dipping. We had a ton of zucchini to use up so this was perfect. And I know the zucchini cakes look burnt to a crisp in this picture, but they were quite tasty!
Dessert: Haagen-Dazs chocolate chocolate chip ice cream (which I forgot to take a picture of)!
Thank you to Jenn at Peas & Crayons for hosting WIAW. Can’t wait to do it again next week!

Welcome, I'm Kristen! I'm a 20-something mother of two working to make exercise and healthy eating a simpler and more enjoyable part of life. I love lifting, running, being outdoors and enjoying food in all it's healthy and not-so-healthy forms. I believe that happiness is as essential to 'healthy living' as exercise and vegetables - that's why I never turn down dessert!

Balance must be your middle name!!! Lots of great healthy eats & I love that you satisfy your cravings & don’t make it a big deal!
Thanks Sable! I have to admit, it’s a lot easier to indulge cravings without feeling bad when you’re pregnant. I can’t pretend I always have the healthiest attitude about balancing healthy foods and treats, but I’m working on it
ahhh congrats on your first one! welcome to the party Kristen!
Thank you Jenn! Looking forward to next Wednesday’s linkup!
